Asparagus
Today, I'm going to post a recipe from my book that features asparagus. I always seem to be in the need for good recipes for side-dishes that fit one and a favorite of mine is asparagus. I have three recipes in my book, but I'll post my favorite. If you're interested in the others I refer you to the book. My favorite is Asparagus with Lemon Butter because I'm a huge fan of lemon as a seasoning. Enjoy.
- 5–8 asparagus stems, trimmed
- 1 Tbsp. butter, melted
- 1 tsp. lemon juice
- 1⁄4 tsp. grated lemon zest
- 1⁄4 tsp. lemon pepper
- dash of coarse sal
- Fill medium saucepan half full of water. Bring to a boil. Add trimmed asparagus and cook for 6–8 minutes, until tender.
- In a small bowl, combine butter, lemon juice and zest, lemon pepper, and salt to make lemon butter.
- Drain asparagus and return to pan. Add lemon butter and toss. Serve immediately and drizzle remaining lemon butter over asparagus.
